Our Methods
At Locomotive we use food preparation methods of the past. Our beef, pork, chicken, and turkey are marinated, brined or cured in our special marinades for up to 5 days, which results in a juicy and flavourful sandwich. All meats in our menu are Ontario raised, antibiotic free, and hormone free.
Pork
We use a tender pork shoulder marinated for 5 days in red wine, carrots, celery, onions, parsley, rosemary, black peppercorns, and coriander. Once removed from marinade, the pork rests for 1 day before braising.
Chicken
We use local whole chickens which we brine for 1 day and remove and allow to rest for 1 day before roasting. The brine includes peppercorns, fennel, thyme, salt and sugar.
Turkey
We use only the breast which we brine for 2 days and remove and allow to rest for 1 day before roasting. The brine includes sage, garlic, black peppercorns, salt, and sugar.
Beef Brisket
The brisket is rubbed with salt, cracked peppercorns, rosemary, oregano and allowed to rest for 2 days before roasting.
Bacon
We cure the entire pork belly for 8-10 days in a brine which includes black peppercorns, bay leaf, garlic, rosemary, coriander, and Prague salt. Our bacon is cured and not smoked.
